As a young chef, Joe first worked at La Parmigiana in 2007, continuing his apprenticeship at Brian Maule @ Le Chardon D’or and Number One restaurant in Edinburgh. As he matured and his expertise grew, he moved to the bright lights of London where he gained essential Michelin star experience, before eventually finding the lure of home too much and returning to Glasgow to continue his journey as a chef of exceptional skill.
